Vegan Banana Pudding Recipe:

Ingredients:

6 ripe bananas, sliced

2 cups of almond milk

3 tablespoons of cornstarch

1/4 cup of maple syrup

2 teaspoons of vanilla extract

1/2 teaspoon of salt

1 (12 oz) package of vegan vanilla wafers

2 cans of coconut cream

2 tablespoons of confectioners’ sugar

Instructions:

In a medium saucepan, whisk together the almond milk, cornstarch, maple syrup, vanilla extract, and salt.

Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to boil.

Remove the saucepan from heat and pour the mixture into a large glass bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.

Refrigerate the pudding for at least 2 hours, or until chilled.

In a separate large bowl, beat together the coconut cream and confectioners’ sugar until stiff peaks form.

In a large glass bowl or trifle dish, layer half of the sliced bananas on the bottom. Spoon half of the chilled pudding mixture on top of the bananas.

Arrange a layer of vegan vanilla wafers on top of the pudding. Repeat the layering process with the remaining bananas, pudding, and vegan vanilla wafers.

Spoon the whipped coconut cream on top of the final layer of vegan vanilla wafers.
