Tips for lactose-free coconut bread
To make this keto coconut bread lactose-free, all you have to do is substitute the butter olive oil for .
I’ve tried this and it works great, although I admit it doesn’t taste as good as using butter.
Coconut oil would work too, but I prefer to use olive oil as it tastes better (especially since you’re already using coconut flour in the mix)
A note on baking powder Keto bread with oat fiber
Please make sure that when baking this recipe you use aluminum-free baking powder. The reason is that if you accidentally use a lot of regular baking powder, it can turn a green color on the bottom section of the bread.
Don’t worry, it’s not you, it’s your baking powder.Aluminum baking powder reacts to acidic ingredients like coconut, causing the greenish color and what many people think of as a metallic taste.Fortunately, this doesn’t hurt to eat the bread, it can only look a little strange. It’s perfectly fine to eat it.
Where to buy xanthan or xanthan gum?Xanthan or xanthan gum can usually be found at your local grocery store, either in the pastry aisle or in the gluten-free section.Xanthan gum helps to combine the ingredients and make the bread rise.
It’s optional in this recipe, so if you can’t find it, you can still make some amazing bread! If you like to buy from home, I recommend that you buy with this affiliate link.
