    3 tbsp aquafaba (chickpea liquid)

    2 tsp. white wine vinegar or lemon juice

    1 tsp. Dijon mustard

    240 ml light olive oil

    salt to taste



1  -Put the aquafaba (the liquid from chickpea jars), vinegar, and Dijon mustard in a tall blender glass or measuring jug.

2 – Beat on high speed with an immersion mixer for about 30 seconds until foamy.

3-Add olive oil with a very fine drizzle and very slowly, while beating at maximum speed. A smooth, creamy emulsion will form. Towards the end, move the mixer up and down to incorporate a little air and make it fluffier.

4-Taste and season until it is just right.

Transfer the vegan mayo to an airtight container and store it in the refrigerator for about two weeks.

Add more oil if you think the mayonnaise is too thin.

If you add too much oil at once, mayonnaise can sometimes separate and cut just like traditional mayonnaise with eggs. If this happens, put more aquafaba in another measuring jug and slowly incorporate the cut mayonnaise while mixing it with the mixer on full power.
