Preparation Keto pancakes with berries and whipped cream

1Add the eggs, cottage cheese and ground psyllium shell powder to a medium bowl and mix. Set aside 5 to 10 minutes to thicken up a bit.

2Heat the butter or oil in a nonstick skillet. Fry pancakes over medium or low heat for 3-4 minutes on each side. Don’t make them too big or they will be hard to flip.

3Add whisk cream to a separate container and beat until frothy.

4   Serve the pancakes with whipped cream and the berries you prefer.

A word of advice!

If you want a very fluffy pancake and don’t mind spending a little more time making them, you can separate the eggs. Use the yolks as instructed, but beat the egg whites in a separate bowl. add the egg whites to the dough, bending them carefully so that the air that entered when beating them does not escape.

They are also a fantastic snack served cold. Wrap some and take them to work!

Presentation suggestions

If you feel like serving them with more than just berries and whipped cream, we recommend that you try raspberry jam, buttercream or hazelnut cream.

How to store and reheat them

These pancakes taste best freshly made, but keep well in the refrigerated for 2-3 days. You can also store them in the freezer for up to three months.

If you want to store them stacked, it may be best to place a piece of baking paper between each pancake so that they do not stick.

The best way to reheat them is to melt a small piece of butter in a pan over medium heat and place the pancakes. It only takes about 30 seconds per side to heat them.
