500 grams of cauliflower
3 tablespoons of flax seeds + 9 tablespoons of water
150 g of rice flour

100 or 200 g of chickpea flour
Hummus, oregano, extra virgin olive oil
16 cherry tomatoes + 16 black olives

Chop the cauliflower (only use the softest parts). Put the cauliflower in a food processor until it is as small as possible.
Put the cauliflower in a frying pan without oil and brown it for about 5 minutes. Let stand until cool. Then, we put it on a napkin or gauze. We have to squeeze it to remove as much water as we can.

Put the flax seeds and water in the blender. Mix and let stand for at least 5 minutes.

In a bowl, add the cauliflower, the flax seeds with water and the rice flour. Also a cup of chickpea flour. We mix with our hands.
We shape pizzas with our hands. Place them on a baking tray lined with parchment paper. We bake about 25 minutes.
We take out the pizzas and spread the hummus. Add the tomatoes, the chopped black olives and the oregano. We bake about 10 more minutes.
Drizzle a little olive oil on top and serve.
