These protein balls have a few simple ingredients, and best of all, no baking is required! They are creamy and full of healthy fats, which makes them perfect for the ketogenic diet. They remind me of Reese’s peanut butter cookies. I like to mix up a large batch of these and spread them out before freezing. They are so delicious frozen, but if you want, you can also keep them in the fridge!

    2 TB butter

    ¾ cup Smucker’s Natural Crunchy Peanut Butter – be sure to stir well

    since the oil stays on top

    ½ cup Besti Allulose sweetener with powdered nun fruit sweetener

    1 tablespoon of coconut flour

    1 teaspoon Lakanto unsweetened maple syrup

    ¼ cup Lilly’s milk chocolate chips unsweetened optional

    Optional topping: 1/4 cup ground peanuts

Instructions to cook Keto recipe coconut flour

    Soften the butter and then beat it with the peanut butter.

    Combine the rest of the ingredients with the peanut mixture, except the crushed peanuts and the chocolate chips. Mix on medium speed until just combined.

    If you want to add the unsweetened chocolate chips, add them to the batter and stir until just combined.

    They are delicious as is, without the chocolate chips, but add a nice extra texture.

    Scoop out the dough with a teaspoon or small cookie scoop, then roll into balls with your hands. I have the Pampered Chef Small Cookie Scoop, which is about 1 tablespoon, which makes it the perfect size.

    Sprinkle crushed peanuts on top. You may have to press them into each ball to make them stick.

    Freeze for at least 20 minutes before eating to make them firm.

    Store in the fridge for up to 2 weeks.

Notes

If you don’t like coconut flour or don’t have it on hand for this recipe, you can substitute almond flour for it. The proper ratio is 1 cup of almond flour for every 1/4 cup of coconut flour. Since this recipe calls for only 1 tablespoon of coconut flour, you should use about 1/4 cup of almond flour. keto diet
