Lunettes, the ideal stuffed cookies to accompany the after-dinner meal

Ox eyes or lunettes are pasta filled with jam, covered with icing sugar, which are ideal to accompany after dinner. If you are a lover of homemade baking, I recommend making this recipe because they come out delicious. They are aromatic, soft and so tender that they melt in your mouth.

The peculiarity of these cookies is that they are taken two at a time, superimposed in the shape of a sandwich with jam in the middle, which appears through the hole in the upper cookie. They are very similar to linzer cookies and Swiss spitzbuben cookies, although with slight variations in the dough.

To cut the dough you need two round cookie cutters, one about 5 cm in diameter and another smaller, enough so that when cutting the inside of the cookie we have a margin to cover with icing sugar. If you don’t have them, you can improvise with a small glass, a bottle cap,…

We beat the butter and icing sugar with electric beaters until we obtain a creamy dough. We add the egg and a teaspoon of vanilla essence. We beat for a few more minutes. We add the flour and baking powder through a strainer and mix with a tongue until integrated. You don’t have to knead.

We wrap the dough in plastic wrap and keep it in the refrigerator for a minimum of 30 minutes. After the resting time, we take the dough out of the refrigerator and roll it out with a rolling pin into a sheet approximately half a centimeter thick. If the dough sticks to the rolling pin, sprinkle it lightly with flour.

Step by step porthole eyes or lunettes

We cut circles of dough and carefully transfer them to a baking tray lined with parchment paper. Then we make a hole in the center of the middle of the cookies, they will be the ones that act as the lid once we assemble the bull’s eyes.

We place the tray in the oven, preheated to 180ºC with heat up and down, and bake the cookies for ten minutes or until the edges begin to brown. We remove them from the oven and let them cool completely before continuing.

On the cookies that do not have a hole, we spread a teaspoon of jam. We sprinkle the ones with the central hole with icing sugar and place them on top, forming a sandwich. And the ox eyes are ready to serve!
