Potato pancakes, I firmly believe that this is one of those recipes that every family needs to have. This potato pancake recipe calls for only a few common ingredients, and I have never met a person who doesn’t like them. The kids are crazy about this! You can serve them with a little sour cream for breakfast or top them generously with this creamy mushroom sauce for a delicious vegetarian dinner.

Can you make potato pancakes ahead of time?
Although the best way to enjoy these potato pancakes is straight from the pan, when they are fresh and crisp, you can successfully freeze them. Simply cook the potato pancakes and then let them cool completely.

Once cool, arrange them in a single layer on a baking sheet and freeze for at least 2 hours or until hard.

What is the difference between potato pancakes and latkes?
Potato latkes and potato pancakes are very similar. They are basically potato fritters fried in oil. Both latkes and pancakes use potatoes and eggs as main ingredients. However, latkes also include baking powder, matzah meal, and even milk.

- If using a food processor: Peel and dice the potatoes and onion. Place the vegetables in the food processor and process for about 2 minutes, until the potatoes are “shredded” and there are no lumps.

2. Place the potato mixture in a fine strainer or kitchen towel and try to squeeze most of the liquid into a bowl.
Squeeze the liquid out of the potato pancakes.

3. Discard the liquid. You will notice white powder at the bottom of the bowl after you pour out the liquid. It’s potato starch and it gives the pancakes texture, so you have to keep it.

4. Return the potato mixture to the bowl and add the egg, flour, with a little salt and pepper.
Add eggs, flour and spices to the mixture.

5. Mix everything well.
Prepare the potato pancake mix.
6. Heat a little vegetable oil in a large nonstick skillet over medium high heat. Add a tablespoon of the potato mixture, spreading a little. Fry for about 2-3 minutes on each side, until the pancakes are crisp and golden.
