Apple sponge cake recipe: the easiest and fluffiest

Cakes are an important part of our house. I always try to have some prepared since at breakfast we really like to have a piece with our coffee. This homemade apple cake is one of my regular ones, and if you make it I think it will also become yours.

The recipe is an adaptation from Lecturas magazine, which sometimes publishes special ones that I find very interesting. You can change the pippin apple for Golden, for example, if the first one is very acidic, although in my opinion it gives a special touch to desserts and is the one I recommend the most.

Otherwise, the recipe is not very different from the usual classic and easy cake.

     Eggs 4

     Apple 3

     Chemical yeast 5 g

     Apricot jam to taste

Old fashioned apple sponge cake recipe

We preheat the oven to 180º with heat up and down without air. We separate the yolks from the whites of the four eggs. We reserve the whites and beat the yolks with the sugar until they turn white. Add the softened butter and beat until perfectly combined.

Moist apple sponge cake recipe

We add the sifted flour and yeast. We whip the whites until they form heavy snow. We add a third to the dough and mix without care to lighten the mixture, we add the rest of the egg whites carefully, with enveloping movements from bottom to top.

Best apple sponge cake recipe

We line a 20 cm round mold with baking paper or grease it with butter and a little flour. Pour half of the dough and harmoniously place thin slices of peeled apple. Pour the rest of the dough and decorate with the remaining apple. Sprinkle a little sugar on top of the fruit and bake for about 45-50 minutes.

If the cake browns very quickly, we can cover it with silver paper once the first 30 minutes of cooking have elapsed. We take out of the oven and leave the cake in the mold for about 15 minutes before removing it from the mold. We heat three tablespoons of apricot jam and brush with it. We serve cold.

This homemade apple cake is extremely tasty and juicy due to the butter and apple. I especially like it to have with breakfast or any snack, although accompanied by ice cream it is also very suitable as a dessert. If you use homemade apricot jam to make the topping, it will be the best.
