Banana pudding cupcakes


1 1/2 cups of all-purpose flour

1 teaspoon of baking powder

1/2 teaspoon of baking soda

1/2 teaspoon of salt

1/2 cup of unsalted butter, softened

1 cup of granulated sugar

2 large eggs

1 teaspoon of vanilla extract

1 cup of mashed ripe bananas

1/2 cup of buttermilk

For the Banana Pudding Filling:

1 (3.4 oz) package of instant vanilla pudding mix

1 1/2 cups of whole milk

1 cup of heavy cream

1/2 cup of confectioners’ sugar

2 ripe bananas, sliced

For the Whipped Cream Topping:

1 cup of heavy cream

2 tablespoons of confectioners’ sugar

1 teaspoon of vanilla extract

Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and mashed bananas.

Add the dry ingredients to the wet ingredients in 3 parts, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

Spoon the batter into the prepared cupcake tin, filling each cup about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely.

For the Banana Pudding Filling, in a large bowl, whisk together the pudding mix, whole milk, heavy cream, and confectioners’ sugar until thick and smooth.

Using a paring knife, cut a small cone-shaped piece from the top of each cupcake. Fill the cavity with the pudding mixture and replace the top.

For the Whipped Cream Topping, in a large bowl, beat the heavy cream, confectioners’ sugar, and vanilla extract until stiff peaks form. Spoon the whipped cream on top of each cupcake.

Top each cupcake with a slice of banana. Serve immediately or refrigerate until ready to serve.
