Keto bread pudding
Keto bread pudding, With this recipe you will get a bread of about 440 grams. By splitting it you will get between 20 and 22 slices. At the end of the recipe I leave you the macros and tips to preserve it.

Ingredients for Keto bread pudding
6 eggs
140 grams almond flour
4 spoonfuls of melted butter
3 teaspoons baking powder
1 wedge lemon
1 cucharita sal
6 drops liquid stevia
Instructions for Keto bread pudding
Preheat the oven to 190ºC / 375ºF.
Separate the yolks from the whites.
Beat the egg whites to the point of snow. When they start to rise add 3 drops of lemon. Keep beating until it “peaks” and is like a meringue.
In a separate bowl add the egg yolks, melted butter, almond flour, baking powder and salt. Mix everything well; a compact mass will remain.
To this mixture add 1/3 of the egg whites and mix with enveloping movements. Keep adding the egg whites little by little, always wrapping them.
You will get a fluffy dough.
Grease the mold with a little butter and pour the batter.
Bake 30 minutes at 190ºC / 375ºF.
After 30 minutes, insert a needle or knife into the bread: if it comes out clean, that’s it. If not, leave it in the oven for a few more minutes.
Let cool 30 minutes before unmolding.
Unmold the bread and cool on a rack for another 30 minutes.
Cut it into slices and enjoy!
Notes
If you want a gluten-free bread , choose a yeast suitable for this diet.
So that the bread is fluffy it is very important to beat the whites well to the point of snow and add them with enveloping movements instead of stirring everything.
In the video I have put 1 teaspoon of salt, but a half can be enough.
If you use a good non-stick mold , you will not need to put greaseproof paper. Spread with oil or butter, nothing sticks.
Conservation Keto bread pudding
Bread can last a couple of days, but the best way to preserve it is to freeze it . In the video I show you how I do it: I put the slices in ziploc bags and freeze them. In this way it is very easy to only take out the slices that you will need.
You can let them thaw or put them in the toaster. They are delicious.
