Ingredients to cook Keto bread with oat fiber
7 large eggs
1/2 cup coconut flour 60g / 2.1 oz
1/2 cup butter 120g / 4 oz; use 1/2 cup of olive / coconut oil to make it lactose free
1/4 tsp. of salt
1/4 tsp. of baking powder free aluminum if possible
1/2 cdita. of xanthan optional
Instructions to cook Keto bread with oat fiber
Preheat the oven to 180 C (355 F). Break the eggs into a bowl and mix for 1 minute until well combined. Add the coconut flour, butter, salt, baking powder, and xanthan gum, and mix until completely combined. The mixture will become a bit thick.
Line an 8.5 x 5-inch (21.5 x 12.7 cm) loaf pan with wax paper and pour the batter into the pan. Level the top with a putty knife if it is uneven. Bake for 50 minutes or until a skewer is pierced through the middle and it comes out clean. Slice it up and store it in the refrigerator for up to 5 days or in the freezer for up to 2 weeks. This bread freezes well.
