1/2 cup butter with salt
Stevia powder to taste
1 teaspoon vanilla extract
1 large egg (50 g)
1 1/2 cups of almond flour
1/2 teaspoon baking powder
1/2 teaspoon xanthan gum (optional or you can use unflavored gelatin)
1/4 teaspoon salt
3/4 cup or 30gr of unsweetened chocolate chips (You can find it in “Dulce Pastry” )
Preparation
Preheat the oven to 180 C (355 F). Heat the butter for 30 seconds to melt, but make sure it is not hot.
Place the butter and stevia powder in a bowl and beat until combined. Add the vanilla and egg, and beat over low heat for exactly 15 seconds. (best results use electric mixer)

Add the almond flour, baking powder, xanthan gum (optional), and salt. Beat until well combined. Press the dough and remove it from the bowl. Add the chocolate chips and incorporate well into the dough with your hands.
