Keto pancakes with almond flour
On a Keto diet and fed up with eating regular eggs every morning? Check out these easy, all-ketogenic pancakes! Using almond flour, eggs and cream cheese to achieve its classic pancake shape and flavor. Baking powder is technically not technically keto, so you can make your own at home if you want these to be a little fluffier. Or just leave it out, the texture is still great! Ingredients
4 ounces of softened cream cheese
1 cup almond flour
4 beaten eggs
1/4 tsp salt
1/2 tsp vanilla extract (optional)
3/4 tsp baking powder (optional)

Add the softened cream cheese, almond flour, eggs, and vanilla extract in a large bowl.
Beat together until fully combined and smooth. If there are a few lumps left, that’s fine. The dough will be thin.

Heat a large cast iron plate or nonstick skillet over medium-high heat. Add butter and turn until melted. Then lower the heat to medium-low. Add the pancake dough in the size you want. The smaller, the better because pancakes are delicate, the harder they are to flip when they are large.

Cook the pancakes for about a minute and then flip the pancakes. Lower the heat if necessary so that they do not burn. Cooking time can vary depending on the surface of your stove.

The dough is delicate and will burn easily. Be sure to keep the heat over medium low heat. Only tall enough to get a good crust, but without burning them!
Making pancakes smaller will make them easier to flip.
