They use almond flour, eggs and cream cheese to achieve their classic pancake shape and flavor. Baking powder is technically not technically keto, so you can make your own at home if you want to make these babies a little fluffier. Or just leave it out, the texture is still great! Step-by-step instructions for this Keto Pancake recipe:
Gather your ingredients. Add the softened cream cheese, almond flour, eggs and vanilla extract in a large bowl. Beat them together until they are fully combined and smooth. A few lumps are fine. The dough will be fine. Heat a large cast iron iron or nonstick skillet over medium-high heat. Add the butter and spin it until it melts. Then lower the heat to medium-low. Add the pancake dough the size you want.

The smaller, the better, because pancakes are delicate, the harder it is to flip when they are big. Cook the pancakes for a minute and then turn them over. Lower the heat if you need one so that they do not burn. Cooking time may vary depending on the top of the stove. Serve the pancakes with more butter and seal them.
