INGREDIENTS:
5 cups of cauliflower rice.
1/2 cup of grated cheese (mozzarella or parmesan) or a 1/3 cup of soft cheese (goat cheese).
1 large beaten egg.
2 tbsp. of cream cheese.
1 teaspoon of Italian seasoning.

PROCESS:
Preheat oven to 400 F/ 204 C.
Add the cauliflower rice to a microwave safe bowl, cover and microwave for 4-5 minutes to soften.
Alternatively, you can sauté the cauliflower rice in a skillet over medium heat on the stovetop for 8-10 minutes. Then let it cool to the touch.

Transfer the cauliflower rice to a thin kitchen towel. Drain cauliflower by squeezing until all excess moisture comes out. Squeeze as hard as you can!
Place the drained cauliflower rice in a large mixing bowl. Add the cheese, egg and seasonings. Use your hands to mix everything together and form the pizza dough.
