6 slices raw bacon, diced

     8 oz cream cheese, room temperature

     1 cup sour cream

     2 tablespoon mayonnaise

    1 tablespoon soy sauce (or tamari or liquid amino acids)

    1 tablespoon garlic powder

    2 boneless skinless chicken thighs cooked and diced

    2 cups baby spinach, chopped

    1 cup grated mozzarella cheese, divided

    1 cup shredded cheddar cheese, divided

    ~ salt and freshly ground pepper

Step-by-step elaboration

    Heat a large skillet over medium-high heat. Add the bacon and cook, stirring occasionally, until golden and crisp, 3 to 5 minutes. Transfer the bacon to a plate lined with kitchen paper.

    Preheat the oven to 400 ° F (204 ° C). Lightly grease a 7-by-7-inch (or comparable size) baking dish.
