I came across a recipe for ricotta cookies and found it interesting. The recipe had to be modified to use low carb ingredients. I also decided to enhance the flavor with almond extract.

Although these cookies are very good without the frosting, I decided to frost them. Adding the sweet almond glaze on top makes them really special.

    ⅔ cup ricotta cheese

    2 teaspoons vanilla extract

    1 teaspoon of baking powder

    ½ teaspoon baking soda

    2 tablespoons almond milk

    ½ cup Swerve Confectioners Powdered Sweetener or Powdered Erythritol

    ½ teaspoon almond extract

Scoop the dough onto a Silpat lined baking sheet using a cookie dough scoop. I recommend freezing the cookie dough scoops for 10-15 minutes before baking to prevent them from being too flat.

Bake for 15 to 18 minutes at 350 ° F until lightly browned. Let them cool on the baking sheet for at least 15 minutes before taking them out, as they are brittle when hot. If needed, place cookies on wire racks to cool completely.
