If you can’t find mascarpone cheese, you can mix 250 g of heavy cream – the kind used for whipping – with a couple of tablespoons of lemon juice and let it rest until the cream sets. You can also use a neutral-flavored cream cheese, an option that I recommend if you suffer from lactose intolerance and cannot find lactose-free mascarpone. You can also substitute part of the mascarpone for some other ingredient such as soft nougat, cocoa cream, etc.
