Ingredients
4 egg yolks
250 gr of mascarpone cheese
200 ml of liquid cream / heavy cream
2 tablespoons of stevia
Soletilla sponge cakes without sugar (quantity depending on how big the mold is)
100 ml skim milk
A glass of decaffeinated coffee
Unsweetened cocoa powder
Step-by-step elaboration
We prepare a glass of coffee and add 1 tablespoon of sweetener. We have used stevia grain sweetener, which is very similar to sugar. We booked.
Heat the milk with the 4 beaten egg yolks in a saucepan over low heat, mixing well to integrate it. Avoid boiling, but thickening and cooking the yolks.

In a rectangular mold, we make a base with a sponge cake without sugar. You have two options, or put them whole and in a row, or crumble them and make a compact dough. We paint them with the coffee that we had saved (and that is already super cold) with the help of a cat’s tongue or brush, and add a layer of mixture (approximately half of the mixture that we have prepared before). We make a layer of sponge cake again, another of mixture, and we finish by sprinkling powdered chocolate on top.
Now we let it rest in the fridge for 3 hours, and then we can serve it as we like best.
