If I wanted to talk about Italian desserts , what is the first thing that would come to mind? Naturally the tiramisu (or as it is written in Italian: tiramisù).

I think it is the most famous Italian dessert in the world. I have not met anyone who has not heard his name, but above all who has not eaten it.

There are several options, my mother for example made it with ricotta (one of my favorite Italian cheeses) which is lighter, with chocolate cream, with strawberry. If we make our fantasy fly we could make infinities of variants.
But what I am going to explain to you in this post is the original Italian recipe for tiramisu, that of a lifetime. You will see how easy it is to prepare it.

Unless you are passionate about the gym or want to have the arms of a bodybuilder, I advise you to use an electric mixer, because we will have to mount the eggs.
It is an operation that can be done by hand as well, in fact I did it once, but it will take much longer or you will not get the same results. If the yolks are not mounted well, the consistency of the cream and its quantity will be affected.

400 gr of Savoiardi cookies (in supermarkets you can find similar cookies, but I recommend this Italian brand because they retain coffee well)
4 eggs
500 gr of mascarpone
100 grams of sugar
300 gr of coffee. BEWARE , make it coffee made with the Moka, the Italian coffee maker

Step-by-step preparation of tiramisu
Step 1: prepare the coffee
First of all, we prepare coffee with mocha, the Italian coffee maker. I have one for 2 people and I usually prepare 3 machines.
We pour the coffee on a plate and while we wait for it to cool, we continue with the rest of the recipe.

Step 2: mount the egg yolks
We break the eggs and separate the whites from the yolks and put them in two different bowls.

We take our friend an electric mixer and begin to whip the egg yolks, gradually adding half the sugar (50gr).
Step 3: add the mascarpone
When the compound gets a yellow color, we add the mascarpone little by little without turning off the mixer, until the cheese binds well to the compound.

Step 3 to prepare the original tiramisu: beat the yolks with the sugar
When the tiramisu cream is compact and uniform, we let it rest and prepare for the next step.
Step 4: mount the whites to the point of snow
Gradually add the rest of the sugar (50 gr) to the whites and beat them until they are stiff. To know when they are ready, we have to turn the bowl over. If the compound does not move they are perfect, if everything falls … well they were not ready.

Step 4 to prepare the original tiramisu: whip the whites until stiff together with the rest of the sugar.
Step 5: prepare the perfect cream
To prepare the perfect tiramisu cream, add a tablespoon of the egg whites to the yolk and mascarpone compound and stir vigorously with a spatula. In this way we dilute the cream a little.
We add the rest of the whites but this time we mix gently from the bottom up.

Step 5 to prepare the original tiramisu: add the mascarpone and continue beating
Step 6: create the traditional tiramisu
Now we take a tablespoon of cream and spread it on our tray to create the base of our tiramisu.
NOTE : we will need to put another 2 layers of cream, so be careful with the quantities.

Now we take our cookies and dip them in the coffee. We give it a couple of turns, but we have to pay attention that they do not get too wet, because if they do, they will fall apart.

We put the cookies on the first layer of cream and create a layer of cookies.
Step 8 to prepare the original tiramisu: put a layer of cookies on top of the cream
Step 8: repeat
We repeat steps 6 and 7. Then we take another spoonful of cream, we pour it on top of the cookies and we spread it.

We are going to prepare a second layer of cookies soaked in the coffee, and finally we add what is left of cream.

As a final touch, we add the bitter cocoa powder on top. To do this we will use a very fine strainer. We have to cover the entire surface, but we have to be careful with the amount to avoid that the cocoa flavor covers the tiramisu, but above all that we choke when we eat our portion.

Step 10 to prepare the original tiramisu: spread the bitter cocoa powder. Before serving the tiramisu, let it rest for at least 2 hours in the fridge. Two hours have already passed and I can leave you my final result. It seems to be very tasty, so I am leaving you because I have gotten very hungry.
